Two things that We the People don’t seem to have much of. Time, we all know is in short supply. Dedication takes time. We have some time, let’s get dedicated.
One of the best things about most of the kitchens I have worked in is that there are ways of dealing with shitty management. Shitty owners are a whole other beast entirely. Corporate restaurants are the worst/easiest. These people are usually so incompetant they hang themselves sooner rather than later. The lead from the office types are my favorite. They stay in the office all shift. Maybe a dining room walk, stop on the line to give orders then back to the office phone. This was before cell phones.
That always gave me a lot of freedom to run the kitchen the way it should be run. By people who are good at their job and care enough to do a crappy job right, the first time.
We can’t afford to wait for our politicians to hang themselves. They always do but the collateral damage to We the People would be devastating. While We the People are skilled at digging ourselves out of piles of shit that someone else dumped on us. It would be nice to start with smaller piles.
